Gosh,  Guess I spent more time in the herb garden than I planned..   Well, I really have been busy and when I am totally exhausted, nothing cheers me up more than a big bowl of "down in the dumps pudding".  If this is new to you, you`ll have to make some QUICK !  When the kids use to come home from school and smell the wonderful aroma from the kitchen, they would say "Oh Boy, Mom is down in the dumps"  ..................
                                                 DOWN IN THE DUMPS PUDDING
            Stir together:  2 cups flour
                                   1 1/2 cups sugar
                                   4 tsp. baking powder
                                   1/2 tsp salt
                                   4 T. cocoa
        then stir in :   1 cup milk
                               4 T. vegetable oil
                                2 cups chopped nuts
      spread mixture in an ungreased 9 by 13 pan

      blend in a small bowl:  2 cups brown sugar
                                           1/2 cup cocoa
Sprinkle this over the top of batter
Then pour over all:  3 cups hot water and bake at 350 for 45 minutes

Serve this warm with a big scoop of ice cream and you`ll think you died and went to heaven!
It forms a yummy sauce underneath so I like it right out of the oven  :)
You can try some different flavors of ice cream with it but nothing beats good old vanilla.

This will keep you going for a while and I promise next time we`ll watch the calories......Smile Always, Bev
