Boy,  Have I got a treat for you !
Since we are all so busy now working in the yard or spring house cleaning, its a great time to whip up this soup for a yummy supper. It is so easy and good.  Please give it a try.

In a large kettle, combine.....
10 cups chicken broth
1 head napa cabbage. shredded
3 cups shredded carrots
3cups sliced mushrooms
                                                                                                        2 T. soy sauce
                                                                                                       4 T. uncooked rice
Simmer all ingredients together for about 30-45 minutes
Then add   3cups diced chicken
                  1/2 cup rice vinegar
                   a few red pepper flakes
Mix 1/3 cup cornstarch with 1/3 cup water and stir into soup.   Heat thoroughly.
To serve, sprinkle the top of each bowl with a few chopped green onions.

I like to serve this with a bowl of rice crackers (from Costco) and a relish tray
How about some lemon sherbet for dessert ?

This soup freezes so well so I always keep a few comtainers on hand.  You`ll be glad you did !
