Good Morning !   Boy, Have I got basil coming out my ears !  Since it is one of the very few herbs you have to replant every year, I was having a hard time getting my plants going.  Now I have oodles :)  I love it though.  When making a cheese sandwich I even use it instead of lettuce with a slice of tomato !  Layering it with tomatoes,Mozzarella cheese and drizzeled with Olive oil and a splash of herb vinegar is yummy on a plate of shredded romaine. 
I just got all my pesto sauce made for the freezer.  I like to put it in baby food jars, little 4 oz. jelly jars, or even ice cube trays (when frozen, pop them out and put in freezer bags).  Heres my recipe, it is so simple and you`ll be thrilled every time you use some !
                                        BEV`S PESTO SAUCE
Into a blender, put.......1 cup good olive oil
                                     6 cloves of garlic
                                     5 T. pine nuts (or pecans,etc)
                                     1/2 tsp. salt
                                    3 1/2 cups packed basil leaves
Blend well and then add ...1 cup grated Parmesan cheese
Blend well.  Put into containers and freeze
It is so handy to add a spoonful to spaghetti sauce, pizza sauce, meatloaf, or just as a spread on a sandwich, tossed with a little pasta and fresh veggies for Pasta Premavera and I love it on a bowl of creamy polenta and a shake of romano cheese.  You`ll find yourself scooping a little out of the jar for a million things.   a few spoonsful to a pot of Minestrone soup works wonders.  Mix a little into some softened cream cheese  and spread on a bagel !  A dollop on top of a grilled steak or chicken breast is wonderful.....Well, you get the idea and you`ll never buy that expensive stuff again.

  4. I love the pesto! I currently have a lot of basil, too. And, of course, an overload of zucchini. Almost every day I saute zucchini in a bit of olive oil and add lots of garlic and my fresh minced basil. My favorite lunch! (or dinner side). Some shredded cheese on top is also good.

  5. I always want to cook with pesto but never do because of Brookies allergies. I've never thought that I should just make my own and set some aside for her without the cheese. I wonder if that would still taste okay...

  6. Hi Bev, I have all your books and love, love, love them! I've also been making pesto for the last few years from our homegrown basil, and freezing the extra. It is so good to pull out throughout the year! Hope to read more on your blog whenever you're up to posting :)
