WOW ! What a weekend!   Saturday was my birthdayand it started off with a BANG !  I heard Paul Ryan was visiting his "elderly 78 year old"  mother !  GULP ! I am 78 now and didn`t think I was "elderly !  Oh well, a friend told me I was a "youthful 78".  The day began with a pancake breakfast at our church, then a trip to the local farmers market.  Peaches, corn, tomatoes etc , all wonderful! ! Then an afternoon of visitors, e mails, letters and phone calls.  How can one person be so blessed. ?  In the evening I went to another picnic and program.  What a day !
Now I have to share something else fun.......My church meetings are not until 1 o`clock on Sundays and Sunday mornings are always so long and kind of lonesome so......I decided to have a SUNDAY BRUNCH CLUB.  I have invited 5 of my friends to brunch each Sunday morning at 10:30, we eat and then have a fun visit until its time to leave for church.  I fix a different menu each week and have a good time coming up with ideas.  They have to "agree" to eat what I fix.  None of them like to cook as much as I do so it works out fine,  They are good sports !  We have been doing it for 3 weeks and it is working out great.  This week I served Granola, Yogurt with fresh fruits, hot caramel pecan rolls and orange juice.  I made GLORIOUS GRANOLA and it is "out of this world".  My son gives me a hard time about the names I give my recipes but this one really is GLORIOUS !  I got the recipe from my sister-in-law Dolores and my friends all had second helpings :)
A perfect ending to a perfect weekend was our monthly "family night"  here with the whole bunch.  I love my family SO much and they really are THE BEST !
                                                     GLORIOUS GRANOLA
Mix together....4 cups rolled oats
                         1 cup sliced coconut
                         1 cup chopped pecans
                         1/2 tsp. salt
then combine..........1/2 cup coconut oil
                                1/4 cup honey
                                1/4 cup REAL maple syrup
                                1 tsp. vanilla
Mix well and pour over oat mixture
spread on a greased cookie sheet and bake at 300 for about 30 minutes, stirring occasionally
 remove from oven and stir in 1 cup dried fruits ( I use craisins, blueberries, cherries and pineapple)

I like mine topped with 1/2 and 1/2 but some of the ladies just did a dollop of yogurt.
This recipe is a little pricey to make (but not as much as commercial and MUCH better)

  1. this looks great grandma! i have all those ingredients on hand except pecans. i wonder if i could try a different nut? i think i'm going to make this because i have been on a major yogurt kick lately and this sounds yummy on it! Thanks!

  2. Oh we love granola around here! I even have some coconut oil. :)

  3. "Glorious Granola" - I love the name haha! I also love the fact that you used coconut oil instead of other types of oil or dairy products. For me, it is more healthy than the others. Will probably try this recipe soon and be more glorious!
